Tea is one of the most popular beverage in the world. Masala Chai is black tea (Assam tea) infused with spices, milk, and sugar. Any kind of milk can be used as per your choice and the sugar also can be substituted for honey, agave, or even maple syrup!
Coarsely crush cinnamon, cardamom, clove, ginger, and peppercorns with the help of a mortar and pestle or a rolling pin. In a sauce pan, take 1 cup of water and bring it to a boil in high heat. Add bay leaf and the crushed spices and boil for 3 minutes in low heat. Add tea and boil for 1 minute. Longer boiling time can make the tea stronger. Now add sugar and milk and boil for another 2 minutes. Through a tea strainer pour directly in small glasses / cups. Done!
