For the past 40 years, the day before my birthday I bake a cake for my family— the simplest cake I know. Today is that day (tomorrow I turn 55!) so I am in the kitchen with all my ingredients.
Prepare a 9 by 4 inch baking tin by brushing a few drops of oil and dusting some flour. Preheat the oven to 180 C (or ~ 350 F).
In a mixing bowl, mix the first 7 ingredients. The order of these 7 ingredients don’t matter too much. After mixing them, add the milk and mix well with a hand mixer or a wire whisk for 3 minutes. If the batter is too thick, you can add 1-2 tsp water. Now add the vinegar and mix for 30 seconds. You can see bubbles forming; pour the mix into the greased pan and sprinkle your toppings and place it into the preheated oven. Bake for 35 to 40 minutes in 180 C (or ~ 350 F) until the top becomes brown. Remove the pan from the oven and insert a toothpick in the center to check whether it is fully cooked or not. If it comes out clean, it is done! If it does not, then cover the pan with foil and bake for 5 to 10 more minutes. Let it cool for half an hour, run a knife through the side of the tin and invert the cake in a plate.
Drizzle chocolate syrup or garnish with ice cream and enjoy!
