Peel the potatoes and grate them in a cheese grater. Take a colander or strainer and place it in the sink. Shift all the grated potato in the colander and wash them in cold running water to get rid of the starch. Now spread a dry towel in the counter and sprinkle all the grated potato in one layer and let them dry for an hour. Pat them with a paper towel from the top to make sure there’s no water. Take a deep frying pan and heat the oil in high heat. Then turn the heat to low medium and take a hand full of the grated potatoes and fry them to light brown. Take them out in a plate and continue with the rest of the grated potatoes. Now sprinkle some salt on the fried potatoes. Done!
